We’ll begin with a roasted, vibrant salsa made the traditional way in a molcajete, where you’ll feel the texture change as ingredients are hand ground and flavors come alive. You’ll learn how roasting and cooking transform simple ingredients into a deeper, richer salsa with smoky complexity. Then a vibrant fresh salsa, and finally, we’ll explore the world of dried chiles through a bold chile oil based salsa, where you’ll discover how different chiles behave, how their flavors shift from fresh to dried, and how to use them with confidence in your own kitchen.

This is not a rushed class. It’s a hands on experience rooted in skill, flavor, and tradition, designed to help you truly understand the “why” behind each method so you can recreate it at home with ease.
